A.R.C wines or ‘A Random Collection’, is exactly that, a random collection of minimal intervention wines produced by Jess and James Audas, from their permaculture farm in West Gippsland Victoria. Their vision of working the land and being in touch with nature came to life in 2019 after leaving the restaurant industry behind in Sydney and relocating to regional VIC. With ethical farming practices being at the very heart of their brand, they struck gold in the beginning of 2020 when they leased 3ha of established biodynamic vines just outside the town of Warragul. They have a hands off approach, giving the wine the chance to express their fruit and journey. All wines are wild ferment, not filtered or fined and vegan friendly. This Cab Merlot  is a testament to these values; produced from fruit from the Peninsula, it sees 50% whole bunch for a carbonic maceration, is aged 6 month on lees and bottled unfiltered and un-fined. It’s funky with finesse and buckets of attitude.
