Blood Moon Wines was started by Matt Aulich, he is passionate about the primal sensory experience of wine, the flavours, aromas and textures. He grows grapes in Sunbury and the Diamond Valley but also sources other fruit from responsible growers all over Victoria. The grapes for this Fiano/Vermentino blend came from the Chalmers Merbein site in the Murray Darling region. Chalmers have spent years refining their approach to viticulture using organic carbon to improve soil and increase water holding capacity, organic nutrient and fungicide as soil health is paramount. Mulch and weed control trials are currently underway to permanently remove the need for chemical knock-down herbicide use. For this expression the two varieties were picked a couple of days apart then pressed together and co-fermented with wild yeast in mostly old neutral French oak barrels for 6 months. The wine was racked once following malolactic fermentation and there was no fining or filtering of the end product.
