No family in Australia has done more for the continued emergence of alternative grape varieties than the Chalmers. Chalmers first brought Greco di Tufo into Australia, this ancient variety grows in many places throughout Campania, but its home turf is in the ancient area known as Irpinia around the town of Tufo. Tufo is also the Italian name of a porous rock composed of compressed volcanic ash prevalent in the area. This intriguing variety makes an equally interesting wine. With bucket-loads of natural acid, these grapes stay vibrant and racy through the warm summer of northern Heathcote, meaning Greco can achieve fruit richness without compromising freshness. The grapes were handpicked, whole bunch pressed, fermented with wild yeast and ages 10 months in old puncheons. Resulting in a wine, bold and intense with ripe apple and poached quince flavours with a chalky, crunchy backbone.
