Corvina, Rondinella, Molinara from Valpolicella, Italy.

Candied Cherries, Almond and Charcuterie

Lets be upfront. This is a very interesting style of wine made in a very old school way. It is about as complex and and layered as a wine can be, but lets get this straight. It is BLOODY DELICIOUS! Perfectly paired with our Roo Ragu or Cured Meats and a rich Gorgonzola Cheese.

Description

Amarone is a style of wine that requires a very lengthy and intensive process. This process contributes to the price and rarity of the wine. The grapes are carefully selected in the vineyards and partly dried and vinified not before 15th December. The features of the climate in this area favour the semi-drying of the grapes, a very ancient method traditional to the area. The wine is then made in a the classic red wine format; long maceration on the skins and fermentation for about two weeks at about 28-30° C. After the malolactic fermentation, the wine is aged by law at least for two years before bottling.
