When the Giammarino family chose to set up their wineries, they decided to do so in two locations. The first in the popular Yarra Valley region and the second, in the Mornington Peninsula. The two different locations have vastly different climates and terriors. The Mornington Penisula with it’s maritime growing conditions and cooling afternoon ocean breezes and the Yarra Valley with its mountainous terrain, both effect the vines and fruit in different ways throughout the wine making process. The winery celebrates its families Italian heritage by having a strong focus on Italian varietals grown in Australia, and on the sustainability of the vineyard including producing their own mulch and fertilizer. With his parents, Vittoria and Nicoletta, nowadays tending to the vineyards, son Dino is now in charge of the wine making processes. This 2017 Fiano was produced with fruit from the Mornington Peninsula vineyard, whilst the 2016 vintage was from the Yarra Valley. Fiano is a variety stemming from Southern Italy and a grape they believed to be at home in the cool climate of the Yarra Valley. For this expression of Fiano, the fruit was hand picked, followed by a short period of juice and skin contact, they then used basket press followed by wild yeast fermentation in French Barrels. This resulted in a bright straw colour, a textural palate of zingy citrus and ripe pear, followed by a dash of spice and a dry finish. Aromas of lemon rind, honey and almond create a balanced character driven Fiano.
