If you’re local to Northcote the you’ve probably/definitely visited or at very least walked past Joes Shoes Store or Va Penne. Co-owner Szebastiaan Butler is also one half of the wine maker duo also known as Greenhouse Knight. Running two restaurants doesn’t leave him with much time so he admits this is very much a side project to both of their full time commitments. They keep their line up simple, using small parcels of fruit from Fruit from a single vineyard in Chirnside Park, only in tiny lots, (1 or 1.5 tonne at a time). Each year they release a white, red or rose/chilled red, the makeup of the wines doesn’t change too much depending what’s available. ‘Bourgunya’ is Single Vineyard Yarra Valley Chardonnay but not necessarily as expected. It’s fermented in two parts, the bulk is a simple barrel ferment that they then stop from going through malo, which they keep on fermentation lees. The smaller part is 100% whole bunch, foot stomped to break it up after 4 or 5 days and then left on skins a week or two post ferment. All blended together and hangs out in old wood and on lees for 9 months, before being bottled by hand.
