Greenstone Vineyards was established in 2003 in Heathcote, it was set up by some of the biggest names in Victorian Viticulture, with a collective agreement that Mediterranean varieties such as Shiraz and Sangiovese would thrive in the soils which are the oldest known in the country (originating over 550 million years ago). It is from these soils that they derived their name – ‘Greenstone’ is a form of copper-infused basalt and is an integral part of the soil. With new owners taking over in 2015, came the expansion to a second vineyard in Yarra Glen in the Yarra Valley with it’s focus being on Chardonnay, Pinot Noir and Cabernet Sauvignon. This particularly limited edition wine, ‘Gimme Some Skin’, is part of their small batch experimental range. It’s produced from a small parcel of Viognier, grown on their Yarra Glen site, with half of the fruit being picked early whilst sugar levels were low and natural acidity was high and processed conventionally to maintain the freshness. The second half was picked later, when the sugars were high and the the fruit was juicy, this was left on skins for 48 hours then pressed to tank for fermentation. The two batches were combined, then matured in old oak barrels for 6 months. This method results in a clean and fresh Viognier, with aromas of orchard fruits and ginger. The palate is savoury and balanced, with a delicate acid backbone.
